Gluten Free Almond Oat Scones

This combination of these two flours increases your gut health!


Gluten free almond oat scone covered with almond butter!

Adding oat flour to this scone recipe increases your fiber intake as well as adds more disease-fighting phytochemicals, vitamins and minerals. I grind my own gluten free organic oatmeal to make my flour. Simple process for big results!


Gluten Free Almond Oat Scones

Sweetness: low

Prep: 20 minutes

Baking time: 17-20 minutes (may vary with your oven)

Yields: 12-13 scones


The one nutrient that makes oats stand out is Beta-Glucan which is the main dietary soluble fiber found in oats commonly known for its ability to help lower cholesterol levels.

Ingredients

1 1/2 C Almond Flour

3/4 C Oat Flour (possibly a little more once all ingredients are combined)

1/4 C Flax Meal

1/2 tsp Baking Soda

1/2 Himalayan Pink Salt or Sea Salt

3 Organic Pasture Raised Eggs

1/3 C Melted Coconut Oil

2 T Organic Maple Syrup

1/2 Almond Extract

1/2 C Organic Raisins

1/2 C Lily’s Stevia Sweetened Chocolate Chips


Preparation

Preheat the oven to 350°F and line a large baking sheet with a silicone mat or parchment paper. Combine the dry and wet ingredients in separate bowls. Pour the dry ingredients into the wet ingredients and mix with a fork until well combined. If it the batter seems too moist, add some oat flour, but not too much! Add the chocolate chips and raisins.


Drop the batter onto the prepared baking sheet in approximately 1/4 cup servings.


Baking

Bake for 17-20 minutes. Check at the 17 minute mark and if when pressed they seem soft in the center, continue for 2-3 minutes until golden brown and firm.


Cool on a rack for 30 minutes before serving. Store in either a Ziploc bag or glass container in the refrigerator.
