Gluten Free Chocolate Chip Scones

It's possible to bake a healthier treat by swapping and adding ingredients!



Below is a recipe my husband and I indulge in quite often. These chocolate chip scones are just enough to satisfy your sweet tooth! The base for these scones was taken from The Gluten-Free Almond Flour Cookbook, written by Elana Amsterdam. I have made several modifications to include anti-inflammatory and heart-healthy ingredients.


Gluten Free Healthy Chocolate Chip Scones

Sweetness: medium

Prep: 20 minutes or less

Baking Time : 12 to 17 minutes

Yield: 12-14 scones


Rich in antioxidants and low in sugar, organic dark chocolate makes these decadent-looking scones a healthy indulgence.

Ingredients

2 1/4 cups blanched Almond flour

1/4 cup Flaxseed Meal

1 T Chia Seeds

1/2 teaspoon Sea Salt

1/2 teaspoon Baking Soda

1/3 cup Organic Coconut oil - Melted

1/4 cup Organic Raw Honey

1 tsp Vanilla

2 large Eggs

1 cup coarsely chopped Dark Chocolate or Chocolate chips


Preparation

Preheat the oven to 350°F. Line 2 large baking sheets with parchment paper. In a large bowl, combine the almond flour, flax meal, chia seeds, salt, and baking soda. In a medium bowl, whisk together the coconut oil, honey, vanilla and eggs. Stir the wet ingredients into the almond flour mixture until thoroughly combined, and then fold in the chocolate.


Drop the batter onto the prepared baking sheets in 1/4 cup servings that are 2 inches apart.


Baking

Bake for 12 to 17 minutes, until golden brown or a toothpick inserted into the center of a scone comes out clean.


Let the scones cool for 30 minutes on the baking sheets, then serve.
