A tasty, fun weekend meal!

Over the past several years that I’ve been gluten free, many delicious recipes have become available. This pizza recipe has become one of my favorite weekend meals. The crust is from “The Healthy Kitchen” cookbook.
Gluten Free Pesto Pizza
Preparation time:
Crust approximately 5 minutes
Pesto approximately 10 minutes
Pizza toppings approximately 10-15 minutes
Baking Times:
Crust 12-13 minutes
Completed Pizza 5-12 minutes depending on the toppings

Doubled recipe yields about 8 pieces
The kale pesto and vegetables make this pizza very nutritious, full of many colorful phytonutrients. You can have the option to make it vegetarian or with an organic meat.
Ingredients
Crust (doubled) 1 1/3 c arrowroot starch, 1/2 c + 4T coconut flour, 2 tsp. cream of tartar, 1 tsp baking soda, 1/2 tsp. sea salt, 4 T extra-virgin olive oil, 1 c warm water
Pesto: 1 bunch kale coarsely chopped, 1/4 c toasted pine nuts, 1/4 c olive oil, juice and zest from 1/2 lemon, 2 cloves garlic, 1/2 tsp salt, 1/2 tsp coconut sugar or more to taste, grind of pepper, pinch of pepper flakes (optional)
Toppings: Organic onions, yellow peppers, red peppers, mushrooms, organic sweet Italian chicken sausage and shredded goat cheddar cheese. (I use different kinds/amounts of toppings every time I make this pizza!)
Preparation
Crust: Line your 9 x 13 rectangular pan or pizza pan with parchment paper. In a mixing bowl, whisk together the dry ingredients. Slowly pour in the olive oil, continuously stirring the mixture as you pour. Mix in the warm water thoroughly. The dough will be slightly crumbly, but once you roll it out, it will bind together.
Place the dough on the prepared pan. Lay another sheet of parchment paper on top of the dough and use your hands or a rolling pin to smooth the dough into a crust about 3/4 inch thick, or use the rolling pin to make any desired shape. Put in the oven at 425 for 12-13 minutes or until golden brown.
Kale Pesto: Place all the ingredients into a food processor and blend until creamy. Add salt or sugar to taste. Spread onto the slightly cooled crust.
Toppings: Cut to desired sizes and sprinkle on top of the pesto. Spread the desired amount of grated cheddar goat cheese over the toppings.
Put completed pizza in the oven at 350 for 5-12 minutes depending on the toppings.
